Chef's Notes
One of my favorite recipes! All made in one pot and even demystifying the Octopus cooking! The perfect dish for the weekend lunch!
Ingredients
700g octopus tentacles
4 tablespoons of olive oil
1 spoon of olive oil
1 chopped onion
2 garlic cloves
1 chopped tomato
200g regular white rice
400ml of liquid (octopus cooking broth + water)
coriander to taste
pepper to taste
Step by step
1. Place the octopus tentacles in the pressure cooker with the 4 tablespoons of olive oil,
2. Close the pan and after getting pressure cook for 12 minutes,
3. Reserve the octopus and the broth (we will use it to cook the rice),
4. In the same pan, sauté the onion in olive oil until translucent,
5. Add the garlic and pepper,
6. When it releases its perfume, add the coriander stalks, the tomato and sauté,
7. Add the rice and cook for about 2 minutes,
8. Add the broth and switch to low heat,
9. When the rice is almost ready,
10. Add the coriander, the chopped octopus and stir,
11. Adjust seasoning and serve.
