File de Grouper à Napolitana is a great recipe for a carnival lunch with family and friends. The preparation is similar to that of a Moqueca, only simpler. You only need one pot and the whole recipe doesn't take half an hour!
Ingredients
3 tablespoons of olive oil
1/2 chopped onion
2 minced garlic cloves
1/2 chili pepper, chopped (to taste)
100ml fish broth or water
100g cherry tomatoes cut in half
1/2 can of peeled tomatoes
2 skinless grouper or large red snapper fillets
10 pitted black olives
12 capers cut in half
basil to taste
Step by step
1. Sauté the onion,
2. garlic and pepper in oil,
3 . Add the fish broth and boil for 2 minutes,
4. Add the tomatoes, peeled tomatoes, salt and fish fillets,
5. After 3 minutes, turn them over,
6. Wait another 2 minutes and add the olives and capers.
