Fish in the Oven with Vegetables

Meals in One Pot or a Board only advance our life when it comes to preparation and dishes, right? I'm fan! This fish in the oven with potatoes, tomatoes and broccoli is a classic from my childhood that my mother used to make a lot!
Ingredients
4 medium potatoes cut into wedges
2 cups raw broccoli florets
1 large red onion in half moon
1 cup diced cherry tomatoes
4 crushed garlic cloves
salt and black pepper
olive oil liberally
400g al fresco tilapia
salt to taste
lemon to taste
fresh oregano to taste
Step by step
1. Put the potatoes in salted water and bring to a boil, as soon as it boils, count 2-3 minutes and drain,
2. Transfer to a tray, add the broccoli, onion, tomato, garlic and season with olive oil, salt and pepper,
3. Stir to incorporate everything,
4. Bake in a preheated oven at 180c for about 15-20 minutes,
5. Place the tilapia on top and season with lemon, salt and oregano,
6. Return to the oven and cook for another 10 minutes or until everything is cooked through!
